my list of apps i add....
(included some already installed for readability and some kind of completeness/comparison)
pidgin & skype. its a painful chunk (couple hundred meg for both, once u include the libs), but gotta keep in touch. not really keen on skype, but its what the boys use. we keep mentioning the likes of mumble and ekiga... but since skype is there and "just works", we succumb to convenience.
gimp + plugins galore (the plugin pack, pandora, potrace & more). its a large chunk, but not so painful, cos thats what i love, the graphics.
audacity and ardour. if i could, i'd have ggseq or a similar app installed too (but i cant get it to compile, and its yet to find its way into the repository).
i might have to see about getting something like one of the "e-jays" or "audition/soundbooth" in a wine *shudders*.
tilda no more. i used to tild, and still do on my big workstation, but on my laptop with crunchbang (and wherever else i take #!) its terminator all the way. often sticking a F11ed multi frame on desktop 1 (of9).
fractal software ... i havnt decided which is best yet, so am hesitant to reccomend xfactint, xaos, wmmand or fractive, as i keep getting them muddled up which is which.
3d, video editing, browser, notepad n more.
blender, blender blender.
video editing
im just gonna stick with blender's for now.
network monitoring
iptraf ... and eth status, since it comes up n does an almost similar job without having to be root.
browsers
firefox, cos duh. + session manager. its the only plugin i consider necessary (see flash bellow). ad blockers, previewers, tab enhancers, flash video downloaders... they're nice, but not essential.
midori, speedy alternative to fatfox. handy for those "i need to see it now" moments.
dillo... ok, i've kinda stopped installing this one.

text editors
gedit, leafpad & nano. leafpad cos its handy, fast doesnt waste much screen space. gedit cos its got the highlighting, and of course, nano, cos it ets you out of a jam, and you dont need to have been using it for years like with vi n emacs to learn enough to use it the same day you need it.
media players
vlc & smplayer.
at first i didnt much like smplayer when trying it out in my "everything installed gentoo box", but have since come around to really valuing it. great frontend for mplayer.
vlc of course is just defacto brilliant.
flash... ugh.
u know about flash cookies right? i dont like that my nix box is held hostage to this proprietary spyware crap... but try using the net without it these days.
oh to be savvy with the code so i could help out those gnash boys.
office suite
..... im between office suites. n dont ever really need them. [i am an] artist, not [an] office drone. 
bloatloads i often at some point clog my os with but rarely use loads of:
ubuntu studio bulk installs.
...arg, n theres a couple other bits n bobs i keep forgetting until i need them.
thing's i'd wine for...
musagi (cept it didnt work under wine last i tried)
animation shop (cos i dont know of a open source alternative for making simple animations yet)
things that almost make me go back to using some proprietary OS because i cant install them
the adobe suite. especially photoshop, after effects and soundbooth.
things i use on my other box, but dont really consider putting on this #! install...
konqueror,
kicker,
xmonad (dwm is fine for single screen n not being fussy about configuring)
billions of other stuff. just about everything i can.
games (if i did install some):
freedroidrpg (not to be confused for mere freedroid) is worth checking out i reckon, especially for us linuxers.
konquest... simple and not tooo addicting.
openttd.... u thought transport tycoon as cool? well its only getting cooler now.
civ
maybe one of the many excellent first person shooters.
games i dont need to install
danball ... its awesome, check it out n play around next time you kick back and relax. great for kids too (im guessing).
